Method
- Pre-heat oven to 180 oC
- Heat 1 tbsp of oil in a pan, add the chopped onion and cook until soft.
- Add the mince and cook until brown.
- Add the carrots and 200ml of beef stock, bring to the boil and reduce the heat and simmer for 15 minutes.
- Peel and roughly chop the potatoes. Cook in boiling water until soft. Drain and mash with a little milk and a knob of butter.
- Transfer the mince into a shallow oven proof dish. Spoon the mash potato on top and cook for 30 minutes.
